Normal vs Crucial is only used to determine whether an item is alllowed to dissappear from the map.
If you recall from playing KF1 or 2, as you kill enemies that drop coins or herbs etc, if you killed enough of them without picking up the items they would eventually begin to dissappear.
Setting an item as crucial guarantees that it will not dissappear before any normal items do. I believe the number of dropped items/coin that SOM can hold is 255 or something close to that.
So if your item is require to finish the game, set it as crucial. If its an earth herb or blood stone, set it as normal.
