Changing fonts isn't as simple as swapping out font files. SoM games have text space considerations which have to be 'synchronized' between the text in the editors and the text ingame. I had to make/size the Georgian font by hand to get it to work. If you would like to try adding more Georgian fonts to SoM's "Display Formatted Message" event, you can try opening SoMG.ttf in a font editor like FontCreator and overwriting its letters with ones from a different font.
As far as changing text from the ingame menus and such, that requires a translation not just a font-swap and the text is embedded in many places in the exe files. Like I said, I'll help with that when you get further into your project.
As far as changing the input text in the other Editors (Parameter, System), they would each need to be handled individually and I've never looked into it since they already supported the English alphabet when they were released, but I can help with that too when you get further into your project.
As far as using VirtualPC, if you get the original SoM install disk 1 2 3, install it to your virtualPC, then apply the v1.2 translation patch, then add the Georgian font files, it should work.
